Lebanese namouras with orange blossom

Ingredients :

380g fine semolina
280g natural yoghurt
170 g of sugar
100g sesame puree
3 teaspoons of orange blossom aroma
1 teaspoon baking soda
about thirty whole almonds

Syrup: 30 cl of water 200g sugar 100g of honey 3 tablespoons orange blossom flavoring

Preperation :

Cake (the day before):
In a bowl, mix the yogurt, sugar, sesame paste.
Add the semolina with the baking soda. Then the orange blossom aroma and mix.
Cover and let stand for 1 hour at room temperature.
Preheat the oven to 180°C. Flour and butter a 30×20 cm rectangular mold. Pour in the preparation. Spread it with a spatula dipped in lukewarm water.
Using a knife dipped in lukewarm water, make crosses on the dough. Insert a whole almond in each braces. Bake for 30 minutes at 180°C.

Syrup (the day before):

While the cake is baking, make the syrup. Bring the water, sugar and honey to a boil. Add the orange blossom aroma off the heat.

As soon as the cake is cooked, pour in all the syrup. Cover with a towel and let sit overnight at room temperature.
The next day, cut the individual cakes.

 

Lebanese garlic sauce​

Ingredients :
  • 10 garlic cloves
  • 20 cl of olive oil
  • juice of 1/2 lemon
  • a pinch of salt
Preparation :
  1. Remove the sprouts from each clove of garlic.
  2. Crush the garlic until it becomes a puree. In the blender or in a mortar.
  3. Salt and add olive oil. Keep mixing.
  4. Add the lemon juice.
  5. The sauce should be thick and smooth. It goes perfectly with grilled meats.
 

Lebanese Salad​

Ingredients :
  • 230g lettuce
  • 200g tomato
  • 30g flat-leaf parsley
  • 30g fresh mint
  • 100g cucumber
  • 180g sweet onions
  • 10g garlic
  • 20 g of vinegar
  • 20g olive oil
  • 1g cumin
  • 1 g turmeric
  • 2g salt
Preparation :
  1. Wash and thin the sprigs of parsley and mint. Peel the cucumbers. Cut them into small cubes, as well as the tomatoes.
  2. Cut the tomatoes and onions into thin rings. Cut the lettuce into strips about 3 cm wide. Crush the garlic.
  3. Toast the bread in the oven for a few minutes until golden brown, then cut it into pieces about 2 cm across.
  4. Put all the ingredients in a salad bowl and mix well. Season with vinegar, cumin, turmeric, salt and oil. Serve immediately.
 

Lebanese bread recipe​

Ingredients :
  • 400g flour
  • 1 sachet of baker's yeast
  • 1 tbsp. salt
  • 1 tbsp. olive oil
  • lukewarm water
Preparation :
  1. Put the yeast in a glass with a little warm water and let rise for 5 to 10 minutes
  2. Put the flour in a bowl, add the yeast, salt, and olive oil
  3. Add lukewarm water (not hot), pour the water little by little until you obtain a smooth and homogeneous ball of dough (about a glass of water + or -)
  4. Knead for 10 minutes, the dough becomes more and more flexible, cover and let the dough rise
  5. The pause time depends on the temperature of the room, the dough must triple in volume
  6. Degas the dough by working it a little by hand, then form 8 balls
  7. Leave the balls to rest for 10 minutes then roll them out very thinly with a rolling pin (it is very important to roll out the dough very thinly).
  8. Preheat the oven to 240°C with a metal plate in it, the oven must be very hot as well as the plate
  9. Bake each pancake for 6 minutes directly on the hot plate, oven between 220 and 240°C
  10. Bread puffs up while baking
  11. Once each bread is cooked, put it in a plastic bag, which allows the bread to keep its elasticity, and it keeps better that way.
  12. Garnish with white sauce, tomatoes, slices of red onion, “kefta”: minced meat with cooked coriander, green salad… or other according to taste..
 
Lebanese Rice

Ingredients :
  • 2 large tablespoons of vermicelli,
  • 2 heaping tablespoons slivered almonds
  • 2 glasses of rice
  • 1 tablespoon oil
Preparation :
  1. In a sauté pan, pour the tablespoon of oil.
  2. When it is hot add your vermicelli and your almonds. Brown one to two minutes, add your rice, mix, and after another one or two minutes, when it is translucent, add 4 glasses of water.
  3. Always always put 2 volume of water for 1 volume of rice.
